Poorprins' End of Trip Brunch/Lunch


For poor people like teachers, nothing goes to waste!

I've often made a "leftovers" potjie....much to the disgust of my snobbish companions!

And it's fast!

Start off as normal by frying onion slices in the potjie...I try to use salad dressing (Vinaigrette) instead of oil...

If you don't have cold leftover jacket potatoes, better boil some quickly on the stove!

Just cut up any leftover cooked braai meat (preferably including boerewors), bacon, deli meats etc. from days before into bite-size chunks (even backstraps), and chuck it all in with a lot of sliced tomato...also probably a bit overripe by that stage of your trip!

Cut up the potatoes into 2cm thick slices and add ON TOP.

Let it simmer for 15 mins or so, with more salad dressing and spices/salt to taste.

Just eat out of the pot, (you can also dip pieces of leftover pap into it), and don't give any to the snobs.

Obviously, you don't travel with three teenagers, 2 boys and a girl.... What is leftover meat?

Try travelling with 30 or more!

30? And you have left-overs? Must be city/town kids then, used to green stuff and soy, not farm-bred, fed on meat...

HP (by appointment of HRH the Queen) sauce seems to be disappearing from the local market - the local P & P as well as Spar supermarkets no longer display it .
Does any one notice the same ?

I have to share this with all the chocolate lovers out there!
It's my favorite baked chocolate pudding. Easy to make, rich, decadent and comes with it's own sauce.

Quick Chocolate Pudding

60g butter or margarine
125g sugar
1 egg
1 tsp vanilla essence
1 large cup self raising flour
Half cup of milk

Cream butter and sugar, add egg and vanilla essence. Add milk and flour. Mix well.
Pour mixture into a deep ovenproof dish.

Sprinkle over the top of the mixture:
4 T cocoa powder
pinch of salt
1 heaped T sugar.
Carefully pour 2-3 cups of boiling water over. (Depending how thick you want the sauce to be, I use 3 cups).

Bake @ 180 deg C for 40 minutes.

If you really want to step out, serve with a dollop of fresh cream.

Last night I was in no mood for cooking so they got a piece of boerie, salad and chocolate pudding for dinner. Oh my, let me tell you! I always make a double batch because the left overs is sooooo good for breakfast!

Cool Jen - thanks - can i just double the quantities and put it in a big dish then ? Sometimes doubling it doesnt work quite so well so I assume this is ok ? I think maybe for tomorrw night ...... OR, I am having a beeeeg meet at my place on Sunday - does it need to be served hot ? thinking of the timeframe here or can i bake it and let it stand for a while ?? might not be such a good idea for a meet (28 people - how many will I have to make ?)

I'm not a fussy cook so I double, triple the quantities without thinking.
Yes, it comes out just fine!
Serving it hot from the oven is best. The sauce becomes thick when it cools down.

28 people? Hmmmm.... you might need a very large dish. I would say a single mix would serve about 6 people but this is definitely a second serving pud.

- ok so I think I am definately going to try this either tonight or tomorrow night and then I will see how many hungry people it feeds - might start off with a double batch tho
