There are some wonderful hikes in GGHNP. Rehbok Trail is wonderful though longer than a day hike, you could always break it up from either end and do it as a long day hike though.
Brandwag is a wonderful hike, steep at times but the view is amazing. Next to brandwag is Mushroom Rock which is also very nice. From the top of Brandwag you can Wodehouse (spelling?) for some more amazing views!
If the weather is nice you can hike Cathedral Caves but you need a guide to go with you. I would highly recommend, beautiful walk through the grasslands with impressive views of the sandstone and often eland. Behind the main hotel there is a nice little jaunt as well that takes you to a series of caves. Ask around, people will be more than willing to point you in the right direction!! Almost forgot, ask about Cleopatra's Pools. There is also a nice hike behind Mountain Retreat to Crystal Pans.
